Course 1: Lamb Tartar: house smoked new zealand lamb, mint aioli, honey pickled radish, quail egg, salt cured quail egg yolk shavings, spicy toasted focaccia
Paired with Red Breast: irish whiskey aged 12 year, single pot still
Course 2: Duck Confit: pan seared duck breast, crispy shredded duck leg, red beet risotto, shaved manchego, orange apricot demi-glace
Paired with Glenlivet 14: cognac cask 14 year aged, single malt speyside scotch
Course 3: Bone-In Cowgirl: charred bone in cowgirl ribeye, duxelles cream, truffled herb butter, root vegetable gratin
Paired with Aberlour: double cask matured 12 years, speyside malt scotch whiskey
Course 4: Cinnamon Apple Bread Pudding: brioche bread, braised apples, silvered candied almonds, cinnamon ice cream, cognac creme anglaise, candied orange peels
